Spillin' the Beans...About OMNI Medical Center's Black Bean Cake Recipe!

If you're craving a sweet treat while you're on your medical weight loss diet, but don't want to have all that sugar, carbs, & fat?


Then why not try OMNI Medical Center 's black bean cake recipe? It contains low-glycemic index carbs, protein-packed Greek yogurt & eggs, and calorie-free vanilla flavoring (mmmm)!

Here's what you need:
  • one 15 oz. can unseasoned black beans (organic)
  • one 3.5 oz container of Greek yogurt (we like Stonyfield Organic)
  •  6 tablespoons organic baking cocoa
  •  1 teaspoon baking powder
  •  1/2 teaspoon baking soda
  •   4 cage-free, organically fed eggs
  •   1 tablespoon vanilla extract
  •   3/4 cup Stevia
  •   1 locally grown pear for garnish (if it's in season!)
Here's how you make it:


-Preheat your oven to 325 F. Rinse the beans and puree them with the vanilla extract in a blender. If the mixture stalls, add a little bit of water.

-In a bowl, mix together cocoa powder, baking soda, and baking powder. In a separate bowl, beat eggs, Stevia, and Greek yogurt together.

-Add the bean puree to the egg, Stevia, and yogurt mixture until well-mixed.

-Gently mix in the cocoa powder, baking soda, and baking powder.

-Grease a 9-inch cake pan and pour in the batter. 

-Bake for 40 to 50 minutes.

-Allow to cool. Then slice, garnish with a piece of pear, serve & enjoy!
